1 heaped teaspoon Cinnamon
1 flat teaspoon Baking Powder
1/4 teaspoon Xanthan Gum
Pinch of Salt
4 heaped tablespoons Maize Flour (fine Polenta)
And a splash of milk or cream (lactose free, soya … whatever you use)
Wizz all the ingredients together
Add a splash of milk to bring to a dropping consistency - I use lactose free cream to up Spike’s calorie intake
Heat a frying pan with a little oil
Drop tablespoon fulls of mixture into it
Turn over after a minute or two - don’t wait for bubbles
Eat immediately with lashings of free from butter or whatever you want.
And if like me you worry about the lack of veg in your childs life add some beetroot / sweet potato or whatever you have to hand. I steam, mash and freeze veg in ice cube trays so I can throw one or two into anything i'm making. The below pancakes have a couple of cubes of beetroot, masked by the brown of cinnamon.
